Wild Rice Topped with Chipotle Chicken, Fresh Salsa, Cheese, and Guacamole

Ingredients
  

  • 2 cups dried rice
  • 8 cups water
  • 1/4 to 1/2 cup fresh cilantro
  • chipotle chicken
  • Salsa
  • guacamole
  • cheese

Instructions
 

  • Soak the rice for about 8 hours in enough water to cover it (optional). This will increase the nutrients and improve digestibility. Get the water boiling and add rice. Reduce heat and cover and simmer for 45 to 60 minutes or until the rice is done to your preference. Drain excess liquid and toss with cilantro (optional). As the rice is cooking start preparing the chicken. You can find our chipotle chicken recipe here. While these cook, shred up your cheese and if you want to make a fresh salsa this a great time to get that ready. Chop up tomatoes, green peppers, and onions and toss together. Right before you are ready to eat, make a fresh, homemade guacamole.
