Wild Rice Topped with Chipotle Chicken, Fresh Salsa, Cheese, and Guacamole

This meal has quickly become a family favorite. We like to use wild rice for this recipe, because it is higher in nutrients, more filling, and easier to digest than modern rice. I have to admit that I didn’t like wild rice the first few times I tried it, but now I really enjoy it. I read that cooking it longer made the grain “fluffier and softer” and this helped a lot. When we used to make this recipe with white rice, I would have to prepare twice as much rice. While it’s more expensive, we don’t have to use as much, and we are convinced that it’s better for us.

We start by soaking the rice to increase the nutrients and improve the digestibility. After we soak the rice overnight, or for just a few hours if I forget, we will start cooking the rice and the chicken. You can find our chipotle chicken recipe here. While these cook, we shred up our homemade cheese or this organic raw cheese here. We make a fresh salsa of tomatoes, green peppers, and onions to keep it simple. In the winter we will use salsa that we canned in the summer. Right before we are ready to eat, we make a fresh, homemade guacamole. Everyone starts with rice on their plate and they choose a topping.

Wild Rice Topped with Chipotle Chicken, Fresh Salsa, Cheese, and Guacamole

Ingredients
  

  • 2 cups dried rice
  • 8 cups water
  • 1/4 to 1/2 cup fresh cilantro
  • chipotle chicken
  • Salsa
  • guacamole
  • cheese

Instructions
 

  • Soak the rice for about 8 hours in enough water to cover it (optional). This will increase the nutrients and improve digestibility. Get the water boiling and add rice. Reduce heat and cover and simmer for 45 to 60 minutes or until the rice is done to your preference. Drain excess liquid and toss with cilantro (optional). While these cook, shred up your cheese and if you want to make a fresh salsa this a great time to get that ready. Chop up tomatoes, green peppers, and onions and toss together. Right before you are ready to eat, make a fresh, homemade guacamole.
