A Favorite Easy Meal For A Busy Day-Crock Pot Vegetables and Beef or Lamb Roast

One of our favorite meals on the farm is roast, vegetables, homemade sourdough bread, and nutritious gravy. When we are planning to be gone for the day or have a busy day of work around the farm, I love to throw this all in the crock pot in the morning for an easy meal when we get home or get done with our work. It’s one of those meals that tastes good and gives me energy to keep pushing on with the work and care of my family that needs to be accomplished after supper.

Another reason I like this meal is because it requires very little thought. I usually throw in a frozen grass finished lamb or beef roast on high by 9:00 a.m. (I’m not a good meal planner), and by 5:00 p.m. that roast is ready to go. It’s always tender and delicious. I try to make sure I have plenty of our sourdough bread on hand, so that’s ready to go too.

As far as vegetables, I tend to use whatever I have at the time. I rarely make trips to a store to buy ingredients (more on this later). Our favorites are carrots and potatoes, and I right now I have some dried celery pieces that I like to put in along with natural salt (find our favorite salt that we sell here), pepper, onions (fresh or dried), and a bay leaf. For lamb I also add rosemary. At supper time the only thing left to do is slice the bread, take everything out of the crock pot, and make the gravy. The extra stock and meat can be used for another meal of soup, beef and gravy over noodles, etc.

Ingredients
  

  • 3 to 5 pound lamb or beef Roast
  • 6 cups water
  • vegetables like carrots/potatoes
  • 2 tsp salt
  • 1 tsp pepper
  • 1 bay leaf
  • 1 tsp dried onion flakes or powder, or 1/2 fresh onion sliced
  • 1/4 cup celery fresh or dried

Instructions
 

  • Add the roast and then the water to the crock pot. Add the rest of the ingredients. Turn the crock pot on high. Leave it for at least 8 hours. Enjoy!
