Flavorful Chili Chicken

Another easy meal for us on the farm is chili chicken. I simply unpackage two frozen, pasture raised chickens (thawed would be great too) and place them in the oven at 350 degrees about 3 hours before we are planning to eat. Once the chicken gets to 165 degrees, I baste it with a butter and seasoning mix and bake it about 5 minutes. When we are ready to eat, everyone cuts off the part that they want and then the leftovers go into a large pot to make nourishing chicken stock. Since there’s plenty of the seasoning mix left we all love to add a little extra to the chicken on our plate. To make this healthy it’s important to use good quality salt and organic seasonings. Organic seasonings are more flavorful and should not contain harmful preservatives or be irradiated. Sweet potato fries, lettuce salad, baked potatoes, or fresh vegetables and ranch dip pair nicely with this chicken.

Flavorful Chili Chicken

Ingredients
  

  • 1 Pasture Raised Whole Chicken
  • 1/4 cup butter
  • 1 Tbsp. chili powder
  • 2 Tsp. smoked paprika
  • 2 Tsp. salt
  • 2 Tsp. ground mustard 1 Tbsp. of prepared organic mustard is good too.

Instructions
 

  • Bake a frozen chicken in a 350 degree oven about 2 1/2 to 3 hours until the temperature of the chicken reads 165. A digital thermometer works great for this. While the chicken is cooking, melt the butter and add the salt and seasonings and mix well. Once the chicken is at 165 degrees, baste the chicken with the butter and seasoning mix. Bake for another 5 minutes.
