Chipotle Mexican Grill’s Homemade Guacamole

Several years ago, Chipotle Mexican Grill released their recipe for guacamole to the public. I was so excited that I wrote it down right away and tried it as soon as I had all the ingredients. It was great! Almost as good as I remembered from eating at their restaurant. 🙂

I will admit that I don’t always make our guacamole this way. If I’m in a hurry, I will throw in some garlic powder, salt, and onion powder to the smashed avocados and call it good. When I take the time and have the ingredients to make it this way, it is even better. The key to a good guacamole is to have perfectly ripe avocados. The avocado should feel soft but firm. I like to look at the stem. If it’s green it’s ripe. If it yellow it’s not ripe. I also like to feel around that area to see if it’s soft so I don’t bruise the avocado. I cut these in half, smash them, and add lime juice, cilantro, onion, jalapeno, and good quality salt. If you prefer you can take the seeds out of the jalapeno pepper for a milder flavor. We love to eat this on top of tacos, rice and meat, with chips, and so much more!

Guacamole

Ingredients
  

  • 2 avocados
  • 2 tsp. lime juice
  • 2 tbsp. chopped cilantro
  • 1/4 cup red onion (finely chopped)
  • 1/2 whole jalapeno with seeds (finely chopped)
  • 1/4 tsp. salt

Instructions
 

  • Cut the avocados in half and the remove the pits. Scoop out the green flesh and place in a bowl. Toss and coat the avocado with lime juice. Add the salt and using a fork or potato masher, mash until you reach a smooth consistency. Fold in the remaining ingredients and mix well.
